List of Egg Parts

The Air Cell

The air cell is locate at the large end of the egg usually. The air cell is a good indicator of how old an egg is. As the egg ages the air cell will expand and get bigger. The air cell is also used by the chick during incubation.

Albumen

The Albumen is the clear/white inside of the egg. It contains half the protein of an egg. As an egg gets older the egg white will slowly get more runny. Also when the weather is hot the egg white tends to run more also.

Chalaza

The Chalaza is a rope like structure that keeps the yoke centered in an egg They connect to both end of the egg and the yoke. This is sometimes mistaken for an embryo because of its white color.

Shell

The outer layer of an egg. It is hard and sometimes susceptible to breaking. The shell helps keep bacteria from entering the egg. The pores in the egg allowing gas exchange while a chick is inside. Also Egg color does not affect taste.

Yoke

The Yoke is the inner most part of the egg. It has an yellow to orange color depending on how the chickens diet is. Some eggs also have double yokes but this depends on the age of the hen laying.
